In a recent study published in Food and Bioprocess Technology, the RMIT team found that saltbush’s protein quality nearly aligns with human nutritional needs. "It is notably high in protein for a plant-based source," noted Samiddhi Gunathilake, a PhD candidate at RMIT and the study's first author. What’s more, it’s rich in minerals like calcium, iron, phosphorus, zinc, and sodium. Sure, it packs more fat than some plants, but that could actually enhance the texture and mouthfeel of certain foods, while its vibrant green hue adds visual flair.

"It matches or even outshines other plant proteins like soy and pea," Gunathilake emphasized, highlighting its potential as a top-tier plant protein.

From Theory to Tasty Innovation

To test its chops, the team integrated saltbush powder into wheat flour noodles, successfully upping the pasta's nutritional stakes. Dr. Mahsa Majzoobi, leading the study, shared, "Our analysis showed saltbush powder contained more than double the protein content of wheat pasta and was eight times higher in dietary fibre." This means one serving delivers a hefty chunk of an adult’s daily protein needs. Saltbush doesn’t just add proteins; it’s a treasure trove of essential amino acids like lysine, which are often missing in wheat products.

With promising lab results in hand, there’s a road ahead to validate its long-term benefits on gut health and nutrition. Dr. Majzoobi is planning the next steps, which include infusing saltbush into more foods like breads, snacks, and plant-based options. "We also plan to collaborate more closely with growers and industry partners," Majzoobi revealed, aiming to ensure sustainable sourcing and scalability. Exciting times are ahead for this humble shrub, making waves in the realm of functional foods.
